BBQ Pulled Chicken Buns with Corn

Ingredients
- chicken thigh (boneless, skinless)450 g
- burger bun2 ea
- barbecue sauce3/4 cup
- chicken stock1 cup
- yellow onionhalf an onion
- frozen corn2 cups
- butter2 tbsp
- red oniona few rings
Method

1Simmer the chicken
- Dice half of the yellow onion.
- Heat 1 tbsp oil in a wide pot over medium heat and soften the onion 3 minutes.
- Add the whole chicken thighs and the chicken stock.
- Cover and simmer 18 to 20 minutes until the chicken shreds easily.

2Pull and sauce
- Shred the chicken right in the pot with two forks.
- Stir in the barbecue sauce.
- Simmer uncovered 5 minutes until thick and glossy.
- Season to taste.

3Butter the corn
- Meanwhile, simmer the corn in salted water 3 minutes.
- Drain and toss with the butter and a pinch of salt.

4Build
- Split and toast the buns in a dry pan 1 minute until golden.
- Pile the pulled chicken high on the buns.
- Top with thin rings of red onion.

5Plate
- Serve with the buttered corn and plenty of napkins.
