Beef Kebab Plate with Rice and Grilled Vegetables
Charred beef skewers with peppers, onion and fluffy rice

Ingredients
- steak (sirloin, for cubes)400 g
- long grain rice1 cup
- bell pepper2 ea
- red onion1 ea
- oregano2 tsp
- cumin1 tsp
- paprika2 tsp
- lemon1 ea
- sour cream1/2 cup
- garlic2 cloves
Method

1Marinate the beef
- Cut the steak into 1¼ inch cubes.
- Toss with the oregano, cumin, paprika, the juice of half of the lemon, 1 tbsp oil and a generous pinch of salt.
- If using wooden skewers, soak them in water now.

2Rice on
- Rinse the rice under cold water until the water runs clear.
- Add the rice to a pot with 1½ cups salted water and bring to a boil.
- Cover, reduce to the lowest heat, and cook 15 minutes until the water is absorbed.
- Let it rest with the lid on for 5 minutes, then fluff with a fork.

3Build and broil the skewers
- Heat the broiler (or a grill pan over high heat).
- Cut the bell peppers and red onion into 1¼ inch pieces.
- Thread the beef, peppers and onion onto skewers, alternating.
- Broil or grill 4 to 5 minutes per side until charred at the edges and the beef is medium.
- Rest the skewers 3 minutes.

4Garlic sauce
- Stir the sour cream with the minced garlic, a squeeze of the remaining lemon and a pinch of salt.

5Plate
- Pile the rice onto two plates and lay the skewers over top.
- Drizzle with the garlic sauce and serve the last lemon wedges alongside.
