Loaded Beef Taco Salad
Crunchy romaine piled with taco beef, cheese, corn and crushed tortilla chips

Ingredients
- ground beef350 g
- romaine1 head
- cheddar cheese1 cup, grated
- cherry tomato1 pint
- frozen corn1 cup
- corn tortilla3 ea
- chili powder1 tbsp
- cumin1 tsp
- sour cream1/2 cup
- lime1 ea
- avocado1 ea
Method

1Crisp the tortillas
- Heat the oven to 400F.
- Cut the corn tortillas into thin strips, toss with 1 tsp oil and a pinch of salt, and bake 8 to 10 minutes until golden and crisp.

2Taco beef
- Meanwhile, heat 1 tbsp oil in a pan over medium-high heat.
- Add the ground beef and cook 5 to 6 minutes, breaking it up, until browned.
- Stir in the chili powder, cumin, a pinch of salt and 1/4 cup water.
- Simmer 2 minutes until saucy.

3Char the corn
- Heat a dry pan over high heat.
- Add the corn and cook 3 to 4 minutes, tossing occasionally, until charred in spots.

4Lime crema
- Stir the sour cream with the juice of half of the lime and a pinch of salt.

5Assemble
- Chop the romaine and spread it over two wide bowls.
- Halve the cherry tomatoes and slice the avocado.
- Pile on the beef, corn, tomatoes, avocado and cheddar.
- Drizzle with the lime crema and top with the tortilla strips.
- Serve with the remaining lime in wedges.
