1Crisp the tortillas

  • Heat the oven to 400F.
  • Cut the corn tortillas into thin strips, toss with 1 tsp oil and a pinch of salt, and bake 8 to 10 minutes until golden and crisp.

  • Meanwhile, heat 1 tbsp oil in a pan over medium-high heat.
  • Add the ground beef and cook 5 to 6 minutes, breaking it up, until browned.
  • Stir in the chili powder, cumin, a pinch of salt and 1/4 cup water.
  • Simmer 2 minutes until saucy.
Char the corn

3Char the corn

  • Heat a dry pan over high heat.
  • Add the corn and cook 3 to 4 minutes, tossing occasionally, until charred in spots.
Lime crema

  • Stir the sour cream with the juice of half of the lime and a pinch of salt.
Assemble

  • Chop the romaine and spread it over two wide bowls.
  • Halve the cherry tomatoes and slice the avocado.
  • Pile on the beef, corn, tomatoes, avocado and cheddar.
  • Drizzle with the lime crema and top with the tortilla strips.
  • Serve with the remaining lime in wedges.
