Crisp the potatoes

1Crisp the potatoes

  • Cut the potatoes into 1/2 inch cubes, skin on.
  • Heat 1 tbsp oil in a large pan over medium-high heat.
  • Cook the potatoes 10 to 12 minutes, tossing occasionally, until golden and tender.
Brown the sausage

2Brown the sausage

  • Squeeze the sausage out of its casings into the pan.
  • Cook 4 to 5 minutes, breaking it up, until browned.
  • Move the potatoes and sausage to a bowl.
Soft scramble

3Soft scramble

  • Beat the eggs with a pinch of salt.
  • Melt a knob of butter in the pan over medium-low heat.
  • Pour in the eggs and scramble gently 2 minutes until just set into soft curds.
Build and toast

4Build and toast

  • Warm the tortillas 20 seconds per side so they roll without cracking.
  • Down the centre of each, layer the cheddar, eggs, sausage and potatoes and the sliced green onions.
  • Fold in the sides and roll tightly into burritos.
  • Toast seam side down in the dry pan 2 minutes per side until golden and sealed.
Plate

  • Halve on an angle.
  • Serve with the hot sauce and sour cream for dunking.
