Loaded Breakfast Burritos
Toasty burritos of soft scrambled eggs, sausage, potato and cheese

Ingredients
- egg5 ea
- flour tortilla2 extra-large
- pork sausage250 g
- yellow potato2 ea
- cheddar cheese1 cup, grated
- green onion2 stalks
- hot sauce1 tbsp
- sour cream1/4 cup
Method

1Crisp the potatoes
- Cut the potatoes into 1/2 inch cubes, skin on.
- Heat 1 tbsp oil in a large pan over medium-high heat.
- Cook the potatoes 10 to 12 minutes, tossing occasionally, until golden and tender.

2Brown the sausage
- Squeeze the sausage out of its casings into the pan.
- Cook 4 to 5 minutes, breaking it up, until browned.
- Move the potatoes and sausage to a bowl.

3Soft scramble
- Beat the eggs with a pinch of salt.
- Melt a knob of butter in the pan over medium-low heat.
- Pour in the eggs and scramble gently 2 minutes until just set into soft curds.

4Build and toast
- Warm the tortillas 20 seconds per side so they roll without cracking.
- Down the centre of each, layer the cheddar, eggs, sausage and potatoes and the sliced green onions.
- Fold in the sides and roll tightly into burritos.
- Toast seam side down in the dry pan 2 minutes per side until golden and sealed.

5Plate
- Halve on an angle.
- Serve with the hot sauce and sour cream for dunking.
