Ingredients
- egg4 ea
- potato3 ea
- bell pepper1 ea
- yellow onion1 ea
- spring mix3 handfuls
- lemon1 ea
- olive oil3 tbsp
- paprika1½ tsp
- hot sauce (optional)2 tsp
Method

1Prep
- Cut the potatoes into 1/2 inch cubes.
- Dice the onion.
- Cut the bell pepper into 1/2 inch pieces.

2Home fries
- Heat 2 tbsp of the olive oil in your widest pan over medium heat.
- Add the potatoes and season generously with salt.
- Cook 15 to 18 minutes, turning every 4 to 5 minutes, until golden and fork-tender.

3Peppers & spice
- Add the onion and bell pepper and cook 5 minutes until soft with charred edges.
- Dust with the paprika and toss 30 seconds until fragrant.
- Slide everything to one side of the pan.

4Fry the eggs
- Add the remaining olive oil to the empty side of the pan.
- Crack in the eggs.
- Fry 2 to 3 minutes until the edges are lacy and crisp and the yolks are still runny, spooning a little hot oil over the whites to set them.

5The board
- Toss the greens with a squeeze of lemon and salt.
- Bring the whole pan to the table with the greens alongside, and the hot sauce if desired.
