  • Dice the onion.
  • Cut the bell pepper into 1/2 inch pieces.

  • Heat 2 tbsp of the olive oil in your widest pan over medium heat.
  • Add the potatoes and season generously with salt.
  • Cook 15 to 18 minutes, turning every 4 to 5 minutes, until golden and fork-tender.

  • Add the onion and bell pepper and cook 5 minutes until soft with charred edges.
  • Dust with the paprika and toss 30 seconds until fragrant.
  • Slide everything to one side of the pan.

  • Crack in the eggs.
  • Fry 2 to 3 minutes until the edges are lacy and crisp and the yolks are still runny, spooning a little hot oil over the whites to set them.
