  • Heat the oven to 425F.
  • Halve the potatoes.
  • Toss the potatoes with 2 tbsp of the olive oil and season to taste with salt.
  • Roast cut-side down 25 minutes until they start to brown.
Prep the steak

  • Meanwhile, pat the steaks bone-dry with paper towel.
  • Salt the steaks generously on all sides, ideally 30 minutes ahead.
  • Smash the garlic cloves with the flat of your knife.
Add the beans

  • Spread the green beans over the potato pan.
  • Drizzle with a little olive oil and toss to coat.
  • Roast 8 to 10 more minutes while you cook the steak.
Sear & baste

  • Heat a cast-iron pan over high heat until it just smokes.
  • Add the remaining olive oil to the pan.
  • Lay the steaks in away from you and sear 3 minutes without touching.
  • Flip the steaks.
  • Add the butter, garlic and thyme to the pan.
  • Tilt the pan and spoon the foaming butter over the steaks continuously for 2 to 3 minutes.
  • Cook to 125F internal for medium-rare (it climbs a few degrees while resting).
Rest & plate

5Rest & plate

  • Rest the steaks 5 full minutes on a board.
  • Slice against the grain.
  • Plate with the potatoes and beans, and pour the pan butter over everything.
