Chicken & Broccoli Stir-Fry with Jasmine Rice

Ingredients
- jasmine rice1 cup
- chicken breast400 g
- broccoli1 ea
- garlic3 cloves
- ginger1 thumb (2 tbsp minced)
- soy sauce3 tbsp
- oyster sauce2 tbsp
- corn starch4 tsp
- sesame oil1 tsp
- green onion (optional)2 stalks
Method

1Start the rice
- Rinse the rice in a fine mesh sieve under cold water until the water runs clear, about 30 seconds.
- Combine the rice, 1¼ cups water and a pinch of salt in a small pot with a lid.
- Bring to a boil over medium-high heat.
- Cover, reduce the heat to low, and cook 15 minutes until the grains are tender.
- Turn off the heat and leave the pot covered until plating.

2Marinate the chicken
- Meanwhile, slice the chicken into thin strips across the grain.
- In a bowl, toss the chicken with 2 tsp of the cornstarch, 1 tbsp of the soy sauce and a pinch of salt.
- Set the chicken aside to marinate 10 minutes.

3Prep
- Cut the broccoli into bite size florets.
- Mince the garlic and ginger.
- Slice the green onions.
- In a small bowl, stir the remaining soy sauce, the oyster sauce, the remaining 2 tsp of cornstarch, the sesame oil and ¼ cup water until smooth.

4Stir-fry
- Heat 1 tbsp oil in a wok over high heat until shimmering.
- Add the chicken in a single layer and sear untouched for 1 minute.
- Stir-fry the chicken 2 to 3 minutes more until just cooked through.
- Move the chicken to a plate.
- Add another 1 tbsp oil and the broccoli with 2 tbsp water to the wok.
- Cover and steam 90 seconds.
- Uncover and stir-fry about 2 minutes until bright green with browned edges.
- Push the broccoli aside, add the garlic and ginger, and stir 30 seconds until fragrant.
- Return the chicken to the wok.
- Give the sauce a final stir and pour it in.
- Toss everything 60 to 90 seconds until the sauce thickens and coats each piece with a gloss.

5Plate
- Fluff the rice with a fork.
- Divide the rice between two bowls.
- Spoon the stir-fry over the rice.
- Finish with the green onions if desired.
