Garlic Butter Steak Bites with Crispy Potatoes

Ingredients
- steak (sirloin)400 g
- yellow potato3 ea
- green bean2 handfuls
- butter3 tbsp
- garlic4 cloves
- parsleya handful
Method

1Roast the potatoes
- Heat the oven to 425F.
- Cut the potatoes into 1 inch chunks, skin on.
- Toss them on a sheet pan with 2 tbsp oil and a pinch of salt.
- Roast 30 to 35 minutes, turning once, until deep golden and crisp.

2Cook the green beans
- Trim the green beans.
- Cook them in a pan with 1/4 cup water, covered, 3 minutes until bright green and crisp-tender.
- Drain and season to taste.

3Sear the steak bites
- Pat the steak dry and cut it into 1 inch cubes.
- Season generously with salt and pepper.
- Heat 1 tbsp oil in a cast-iron skillet over high heat until it just starts to smoke.
- Sear the cubes in a single layer 1 to 2 minutes per side until deeply browned but still pink inside.

4Garlic butter
- Reduce the heat to low and add the butter and minced garlic.
- Roll the steak bites in the foaming garlic butter for 1 minute.
- Toss in the chopped parsley.

5Plate
- Plate the steak bites with the potatoes and green beans.
- Spoon the pan's garlic butter over everything.
