Glazed Meatloaf with Mash and Green Beans

Ingredients
- ground beef500 g
- bread crumbs1/2 cup
- egg1 ea
- yellow onionhalf an onion
- ketchup6 tbsp
- worcestershire sauce1 tbsp
- russet potato3 large
- green bean2 handfuls
- butter3 tbsp
- whole milk1/4 cup
Method

1Mix the meatloaf
- Heat the oven to 375F.
- Grate half of the onion into a large bowl.
- Add the ground beef, breadcrumbs, egg, worcestershire sauce, 2 tbsp of the ketchup, 1 tsp salt and a generous grind of pepper.
- Mix gently with your hands until just combined.
- Shape into a loaf on a parchment-lined sheet pan.

2Bake and glaze
- Bake the loaf 30 minutes.
- Spread the remaining ketchup over the top.
- Bake 15 to 20 minutes more until it reads 160F in the middle.
- Rest the meatloaf 5 minutes before slicing.

3Boil and mash
- Meanwhile, peel the potatoes and cut them into 1 inch chunks.
- Add the potatoes to a pot of cold salted water and bring to a boil.
- Cook 12 to 15 minutes until a fork slides in easily.
- Drain, then mash with the butter and milk until smooth.
- Season the mash to taste with salt.

4Cook the green beans
- Trim the green beans.
- Cook them in a pan with 1/4 cup water, covered, 3 minutes until bright green and crisp-tender.
- Drain, season to taste, and toss with a small knob of butter.

5Plate
- Slice the meatloaf into thick slices.
- Plate with the mash and green beans, spooning any glaze and pan juices over the meat.
