  • Heat the oven to 375F.
  • Grate half of the onion into a large bowl.
  • Add the ground beef, breadcrumbs, egg, worcestershire sauce, 2 tbsp of the ketchup, 1 tsp salt and a generous grind of pepper.
  • Mix gently with your hands until just combined.
  • Shape into a loaf on a parchment-lined sheet pan.
Bake and glaze

  • Bake the loaf 30 minutes.
  • Spread the remaining ketchup over the top.
  • Bake 15 to 20 minutes more until it reads 160F in the middle.
  • Rest the meatloaf 5 minutes before slicing.

  • Meanwhile, peel the potatoes and cut them into 1 inch chunks.
  • Add the potatoes to a pot of cold salted water and bring to a boil.
  • Cook 12 to 15 minutes until a fork slides in easily.
  • Drain, then mash with the butter and milk until smooth.
  • Season the mash to taste with salt.
Cook the green beans

4Cook the green beans

  • Trim the green beans.
  • Cook them in a pan with 1/4 cup water, covered, 3 minutes until bright green and crisp-tender.
  • Drain, season to taste, and toss with a small knob of butter.
Plate

  • Slice the meatloaf into thick slices.
  • Plate with the mash and green beans, spooning any glaze and pan juices over the meat.
