Lamb Kofta Pitas
Spiced lamb patties in warm pitas with chopped salad and garlic sauce

Ingredients
- ground lamb450 g
- pita4 ea
- cumin2 tsp
- ground coriander1 tsp
- garlic3 cloves
- red onion1 ea
- cucumberhalf a cucumber
- roma tomato2 ea
- sour cream1/2 cup
- minta handful
- lemon1 ea
Method

1Mix the kofta
- Grate a quarter of the red onion into a large bowl.
- Add the ground lamb, cumin, coriander, two minced cloves of garlic, 1 tsp salt and a grind of pepper.
- Mix gently and shape into 6 small oval patties.

2Make the salad and sauce
- Dice half of the cucumber and the roma tomatoes.
- Thinly slice the remaining red onion.
- Chop the mint and toss half through the salad with a pinch of salt.
- Stir the sour cream with the remaining minced garlic, the rest of the mint and a squeeze of half of the lemon.

3Sear the kofta
- Heat 1 tbsp oil in a large pan over medium-high heat.
- Sear the patties 3 to 4 minutes per side until deeply browned and they read 160F in the middle.

4Warm the pitas
- Meanwhile, warm the pitas in a dry pan over medium heat 30 seconds per side.
- Wrap them in a clean towel to keep soft.

5Plate
- Pile the kofta, salad and sauce onto a platter with the warm pitas.
- Serve with the remaining lemon in wedges and build at the table.
