  • Slice it against the grain as thinly as you can.
  • Thinly slice the bell pepper and onion.

  • Cook the pepper and onion 5 to 6 minutes, stirring occasionally, until soft and charred at the edges.
  • Move them to a plate.
Sear the beef

  • Add 1 tbsp oil to the same pan over high heat.
  • Spread the beef in a single layer, season with salt and pepper, and sear 1 to 2 minutes until browned.
  • Chop through it with the spatula, return the vegetables, and pile into two sandwich-length rows.
  • Cover each row with the mozzarella, drop the heat to low, and lid the pan 1 minute until melted.
Toast and build

  • Meanwhile, split the baguette into two sub lengths and toast cut side up under the broiler 2 minutes until golden.
  • Spread with the mayonnaise.
  • Slide a cheesy beef row into each baguette.

  • Halve the sandwiches and serve hot with napkins.
