Philly-Style Cheesesteak Sandwiches
Shaved seared beef, melty cheese and charred peppers on toasted baguette

Ingredients
- steak (sirloin or strip)350 g
- baguette1 ea
- mozzarella cheese1½ cups, grated
- bell pepper1 ea
- yellow onion1 ea
- mayonnaise2 tbsp
Method

1Prep
- Put the steak in the freezer for 15 minutes to firm up.
- Slice it against the grain as thinly as you can.
- Thinly slice the bell pepper and onion.

2Char the vegetables
- Heat 1 tbsp oil in a large pan over high heat.
- Cook the pepper and onion 5 to 6 minutes, stirring occasionally, until soft and charred at the edges.
- Move them to a plate.

3Sear the beef
- Add 1 tbsp oil to the same pan over high heat.
- Spread the beef in a single layer, season with salt and pepper, and sear 1 to 2 minutes until browned.
- Chop through it with the spatula, return the vegetables, and pile into two sandwich-length rows.
- Cover each row with the mozzarella, drop the heat to low, and lid the pan 1 minute until melted.

4Toast and build
- Meanwhile, split the baguette into two sub lengths and toast cut side up under the broiler 2 minutes until golden.
- Spread with the mayonnaise.
- Slide a cheesy beef row into each baguette.

5Plate
- Halve the sandwiches and serve hot with napkins.
