Sausage and Peppers Skillet with Garlic Bread

Ingredients
- Italian sausage (links)450 g
- bell pepper2 ea
- yellow onion1 ea
- garlic3 cloves
- on the vine tomato2 ea
- oregano1 tsp
- baguettehalf a baguette
- butter2 tbsp
Method

1Brown the sausages
- Heat 1 tbsp oil in a large pan over medium-high heat.
- Add the sausages and brown 6 to 8 minutes, turning, until deeply golden all over.
- Move the sausages to a plate.

2Char the peppers
- Slice the bell peppers and onion into thick strips.
- Add them to the pan and cook 6 to 7 minutes, stirring occasionally, until softened and charred at the edges.
- Add two minced cloves of garlic and the oregano and cook 1 minute.
- Chop the tomatoes, add them, and cook 2 minutes until saucy.

3Finish the sausages
- Nestle the sausages back in with any juices.
- Cover and cook 6 to 8 minutes until they read 160F in the middle.
- Season to taste.

4Garlic bread
- Meanwhile, heat the broiler.
- Mash the butter with the remaining minced clove of garlic.
- Split half of the baguette lengthwise and spread with the garlic butter.
- Broil 2 to 3 minutes until golden at the edges.

5Plate
- Plate the sausages over the peppers and onions.
- Serve the garlic bread alongside.
