Ingredients
- lasagna6 sheets, broken
- ground beef400 g
- on the vine tomato5 ea
- yellow onion1 ea
- garlic3 cloves
- cottage cheese1 cup
- mozzarella cheese1½ cups, grated
- oregano1 tsp
- basila handful
- arugula3 big handfuls
- olive oil1 tbsp
- lemon1 ea
Method

1Make the meat sauce
- Heat 1 tbsp oil in a deep skillet over medium-high heat.
- Add the ground beef and cook 5 minutes, breaking it up, until browned.
- Add the diced onion, minced garlic and oregano and cook 3 minutes.
- Grate the tomatoes on a box grater, discarding the skins, and pour them in with 1½ cups water.

2Cook the noodles in the sauce
- Break the lasagna sheets into rough 2 inch shards and nestle them into the sauce.
- Cover and simmer 15 to 18 minutes, stirring gently every few minutes so nothing sticks, until the noodles are tender.
- Season to taste.

3Cheese layers
- Heat the broiler.
- Dollop the cottage cheese over the skillet in big spoonfuls.
- Sprinkle the mozzarella over everything.
- Broil 2 to 3 minutes until molten and browned in spots.

4Dress the salad
- Meanwhile, whisk the olive oil with a squeeze of lemon and a pinch of salt in a large bowl.
- Add the arugula and toss to coat just before serving.

5Plate
- Rest 3 minutes so the layers set.
- Garnish with the basil and scoop generous portions onto plates.
- Serve with the dressed arugula salad alongside.
