  • Heat 1 tbsp oil in a deep skillet over medium-high heat.
  • Add the ground beef and cook 5 minutes, breaking it up, until browned.
  • Add the diced onion, minced garlic and oregano and cook 3 minutes.
  • Grate the tomatoes on a box grater, discarding the skins, and pour them in with 1½ cups water.

  • Break the lasagna sheets into rough 2 inch shards and nestle them into the sauce.
  • Cover and simmer 15 to 18 minutes, stirring gently every few minutes so nothing sticks, until the noodles are tender.
  • Season to taste.

  • Heat the broiler.
  • Dollop the cottage cheese over the skillet in big spoonfuls.
  • Sprinkle the mozzarella over everything.
  • Broil 2 to 3 minutes until molten and browned in spots.
Dress the salad

4Dress the salad

  • Meanwhile, whisk the olive oil with a squeeze of lemon and a pinch of salt in a large bowl.
  • Add the arugula and toss to coat just before serving.

  • Rest 3 minutes so the layers set.
  • Garnish with the basil and scoop generous portions onto plates.
  • Serve with the dressed arugula salad alongside.
