  • Cut the potatoes into wedges.
  • Toss the wedges with 1 tbsp oil and season to taste with salt.
  • Roast cut-side down on a lined pan 30 to 35 minutes, flipping once, until golden and crisp.

  • Stir in the ketchup, Worcestershire, mustard, brown sugar and ⅓ cup water.
  • Simmer 8 to 10 minutes until thick enough to sit on a bun without running.
  • Season with salt and pepper to taste.

  • Whisk the mayo and apple cider vinegar with a pinch of salt in a bowl.
  • Toss with the cabbage until coated.

  • Toast the burger buns in a dry pan until warm.
  • Pile the beef filling high on the bottom buns.
