Steak and Eggs with Crispy Potatoes

1Crisp the potatoes
- Cut the potatoes into 1/2 inch cubes, skin on.
- Heat 2 tbsp oil in a large cast-iron skillet over medium-high heat.
- Cook the potatoes 12 to 15 minutes, tossing every few minutes, until golden and crisp.
- Season to taste and move them to a warm plate.

2Sear the steak
- Pat the steak dry and season generously with salt and pepper.
- Raise the heat to high until the pan just starts to smoke.
- Sear the steak 3 to 4 minutes per side until deeply browned and it reads 130F for medium-rare.
- Drop in the butter and smashed garlic and baste the steak 30 seconds.
- Rest the steak 5 minutes on a board.

3Fry the eggs
- Reduce the heat to medium and crack the eggs into the pan's butter.
- Fry 2 to 3 minutes until the whites are set and the yolks still runny.

4Plate
- Slice the rested steak against the grain.
- Plate the steak, eggs and potatoes.
- Snip the chives over everything and serve with the hot sauce.
