Steak and Eggs with Crispy Potatoes

Crisp the potatoes

  • Cut the potatoes into 1/2 inch cubes, skin on.
  • Heat 2 tbsp oil in a large cast-iron skillet over medium-high heat.
  • Cook the potatoes 12 to 15 minutes, tossing every few minutes, until golden and crisp.
  • Season to taste and move them to a warm plate.
Sear the steak

  • Pat the steak dry and season generously with salt and pepper.
  • Raise the heat to high until the pan just starts to smoke.
  • Sear the steak 3 to 4 minutes per side until deeply browned and it reads 130F for medium-rare.
  • Drop in 2 tbsp of the butter and 2 smashed cloves of garlic and baste the steak 30 seconds.
  • Rest the steak 5 minutes on a board.
Fry the eggs

3Fry the eggs

  • Reduce the heat to medium and crack the eggs into the pan's butter.
  • Fry 2 to 3 minutes until the whites are set and the yolks still runny.
Garlicky mushrooms

4Garlicky mushrooms

  • Meanwhile, slice the mushrooms 1/4 inch thick.
  • Melt the remaining butter in the steak pan over medium-high heat.
  • Add the mushrooms and cook 5 minutes until browned.
  • Add the remaining minced garlic and cook 30 seconds until fragrant, then season with salt.
Plate

  • Slice the rested steak against the grain.
  • Plate the steak, eggs and potatoes.
  • Spoon the mushrooms alongside.
  • Snip the chives over everything and serve with the hot sauce.
