Crispy Salmon Patties with Lemon Mayo & Greens

Ingredients
- salmon (fresh, or 2 cans (213 g each))350 g
- egg1 ea
- green onion2 stalks
- all purpose flour⅓ cup
- mayonnaise4 tbsp
- lemon1 ea
- dill (optional)a few sprigs
- spring mix3 handfuls
Method

1The salmon
- Simmer the salmon in barely-bubbling salted water 6 to 8 minutes until it flakes.
- Cool the salmon, then flake it, discarding the skin.
- Squeeze out extra moisture so you have dryish flakes.

2Mix and shape
- Slice the green onions fine.
- Chop the dill.
- Mix the salmon with the egg, 2 tbsp of the mayonnaise, the flour and the zest of the lemon.
- Season to taste with salt and pepper.
- Shape into 4 patties about 3/4 inch thick.
- Chill the patties 10 minutes so they hold together.

3Fry
- Heat 3 tbsp oil in a wide pan over medium heat.
- Fry the patties 3 to 4 minutes per side, flipping once with a thin spatula, until deep golden and hot through.

4Lemon mayo and salad
- Meanwhile, stir the remaining mayonnaise with the juice of half the lemon.
- Toss the greens with the juice of the other half of the lemon and a pinch of salt.

5Plate
- Serve two patties each over the greens.
- Add the lemon mayo for dipping.
- Garnish with dill if desired.
