  • Simmer the salmon in barely-bubbling salted water 6 to 8 minutes until it flakes.
  • Cool the salmon, then flake it, discarding the skin.
  • Squeeze out extra moisture so you have dryish flakes.

  • Slice the green onions fine.
  • Chop the dill.
  • Mix the salmon with the egg, 2 tbsp of the mayonnaise, the flour and the zest of the lemon.
  • Season to taste with salt and pepper.
  • Shape into 4 patties about 3/4 inch thick.
  • Chill the patties 10 minutes so they hold together.
Fry

  • Heat 3 tbsp oil in a wide pan over medium heat.
  • Fry the patties 3 to 4 minutes per side, flipping once with a thin spatula, until deep golden and hot through.
Lemon mayo and salad

4Lemon mayo and salad

  • Meanwhile, stir the remaining mayonnaise with the juice of half the lemon.
  • Toss the greens with the juice of the other half of the lemon and a pinch of salt.
Plate

  • Serve two patties each over the greens.
  • Add the lemon mayo for dipping.
  • Garnish with dill if desired.
