Turkey Club Wraps with Sweet Potato Wedges

Ingredients
- turkey breast300 g
- bacon4 strips
- flour tortilla2 large
- sweet potato2 ea
- romainea few leaves
- roma tomato2 ea
- mayonnaise3 tbsp
- mustard2 tsp
Method

1Roast the wedges
- Heat the oven to 425F.
- Cut the sweet potatoes into 3/4 inch wedges, skin on.
- Toss them on a sheet pan with 1 tbsp oil and a pinch of salt.
- Roast 25 to 30 minutes, flipping once, until browned and tender.

2Cook the bacon and turkey
- Meanwhile, cook the bacon in a pan over medium heat 5 to 6 minutes until crisp, then drain.
- Thinly slice the turkey breast and season with salt and pepper.
- Cook the turkey in the bacon fat 2 to 3 minutes per side until golden and cooked through.

3Build the wraps
- Stir the mayonnaise and mustard together and spread over the tortillas.
- Layer on the romaine, sliced roma tomatoes, turkey and bacon.
- Roll tightly, tucking in the ends.

4Toast
- Toast the wraps seam side down in the dry pan over medium heat 2 minutes per side until golden and sealed.

5Plate
- Halve the wraps on an angle.
- Serve with the sweet potato wedges.
