Boil the noodles

  • Bring a large pot of salted water to a boil.
  • Cook the egg noodles 4 to 5 minutes until just tender.
  • Drain, rinse under cold water, and toss with a drizzle of oil.
Make the sauce

  • Stir the ketchup, worcestershire sauce, soy sauce and sugar together in a small bowl.
Cook the pork

  • Meanwhile, thinly slice a quarter of a head of cabbage and cut the carrot into matchsticks.
  • Heat 1 tbsp oil in a wok over high heat.
  • Add the ground pork and cook 4 to 5 minutes, breaking it up, until browned.
  • Add the cabbage and carrot and stir-fry 2 minutes until just wilted.
Griddle the noodles

4Griddle the noodles

  • Add the noodles and the sauce to the wok.
  • Toss with tongs 2 to 3 minutes until the noodles catch a little char and everything is glossed.
  • Fold in the green onions cut into 1 inch lengths.
Plate

5Plate

  • Season to taste with pepper.
  • Pile into two bowls and serve hot.
