Baked Shrimp with Feta and Tomatoes

Ingredients
- shrimp (peeled and deveined)350 g
- feta cheese3/4 cup, crumbled
- on the vine tomato5 ea
- garlic3 cloves
- yellow onionhalf an onion
- oregano1 tsp
- baguettehalf a baguette
- parsleya handful
- olive oil2 tbsp
Method

1Make the tomato base
- Heat the oven to 425F.
- Dice half of the onion.
- Heat the olive oil in an oven-safe skillet over medium heat.
- Cook the onion 4 minutes until softened.
- Add the minced garlic and oregano and cook 1 minute.
- Chop the tomatoes, add them, and simmer 8 minutes, mashing, until thick and saucy.
- Season to taste.

2Bake with shrimp and feta
- Pat the shrimp dry and nestle them into the sauce.
- Crumble the feta over top.
- Bake 8 to 10 minutes until the shrimp are pink and the feta softens.

3Toast the baguette
- Meanwhile, slice half of the baguette thick.
- Toast the slices directly on the oven rack 3 to 4 minutes until golden at the edges.

4Plate
- Garnish the skillet with the chopped parsley.
- Serve bubbling, with the toasted bread for scooping and mopping.
