  • Mince the garlic.
  • Dice the tomatoes and cucumber.
  • Shred the lettuce.
  • Grate the cheddar.
  • Set the toppings out in bowls.

  • Heat 1 tbsp oil in a skillet over medium-high heat.
  • Cook the diced onion 3 minutes.
  • Add the garlic and cook 30 seconds.
  • Add the beef, breaking it up, and cook about 6 minutes until browned.
  • Stir in the chili powder, cumin, paprika, a pinch of salt and ⅓ cup water.
  • Simmer 5 minutes until saucy, not wet.

  • Warm the tortillas in a dry pan over medium heat about 1 minute per side until soft and pliable.

  • Meanwhile, toss half the lettuce with the cucumber.
  • Dress with a squeeze of lime, a drizzle of oil and a pinch of salt.
