Ingredients
- ground beef450 g
- flour tortilla6 ea
- yellow onion1 ea
- garlic2 cloves
- chili powder2½ tsp
- cumin1½ tsp
- paprika1 tsp
- roma tomato2 ea
- iceberg lettuce½ head
- cheddar cheese100 g
- sour cream⅓ cup
- lime1 ea
- cucumber½
Method

1Prep
- Dice half the onion and thinly slice the rest.
- Mince the garlic.
- Dice the tomatoes and cucumber.
- Shred the lettuce.
- Grate the cheddar.
- Set the toppings out in bowls.

2Taco beef
- Heat 1 tbsp oil in a skillet over medium-high heat.
- Cook the diced onion 3 minutes.
- Add the garlic and cook 30 seconds.
- Add the beef, breaking it up, and cook about 6 minutes until browned.
- Stir in the chili powder, cumin, paprika, a pinch of salt and ⅓ cup water.
- Simmer 5 minutes until saucy, not wet.

3Warm the shells
- Warm the tortillas in a dry pan over medium heat about 1 minute per side until soft and pliable.

4Side salad
- Meanwhile, toss half the lettuce with the cucumber.
- Dress with a squeeze of lime, a drizzle of oil and a pinch of salt.

5Plate
- Fill the warm tortillas with the beef.
- Top with the cheddar, tomato, sliced onion, shredded lettuce, sour cream and a squeeze of lime.
- Serve the side salad alongside.
