Ingredients
- ground beef450 g
- turtle beans (1 can (540 ml) black beans)350 g
- cheddar cheese150 g
- iceberg lettucehalf a head
- roma tomato3 ea
- red onion1 ea
- sour cream½ cup
- lime2 ea
- chili powder1 tbsp
- cumin2 tsp
- cilantro (optional)a handful
- flour tortilla6 ea
Method

1Topping bowls
- Shred the iceberg lettuce fine.
- Dice the tomatoes small.
- Mince half of the red onion.
- Grate the cheddar.
- Chop the cilantro if desired.
- Cut the limes into wedges.
- Put each topping into its own little bowl.

2Refried-style beans
- Rinse and drain the black beans.
- Warm the beans in a small pot with a splash of water and a pinch of salt.
- Mash roughly with a fork until spoonable but still chunky.

3Taco beef
- Brown the ground beef in a dry pan over medium-high heat, crumbling it small, 6 to 7 minutes.
- Stir in the chili powder, cumin and ¼ cup water, and season with salt.
- Simmer 3 minutes until juicy and clinging to itself.

4Warm the shells
- Warm the tortillas in a dry pan 20 seconds a side until soft.
- Stack in a clean towel to stay warm.

5Build
- Bring everything to the table.
- Layer the black beans, then the ground beef, then the cheddar while it is hot enough to melt.
- Add the fresh toppings, sour cream and a squeeze of lime.
