Ingredients
- ground chicken450 g
- iceberg lettuce1 ea
- hoisin sauce3 tbsp
- soy sauce1 tbsp
- sesame oil2 tsp
- garlic2 cloves
- gingera thumb
- green onion3 stalks
- carrot1 ea
- peanuts3 tbsp, crushed
Method

1Prep
- Cut the core out of the iceberg lettuce and separate 8 whole leaves into cups.
- Soak the lettuce cups in ice water while you cook.
- Mince the garlic.
- Grate the ginger.
- Thinly slice the green onions.
- Grate the carrot.

2Cook the chicken
- Heat 1 tbsp oil in a large pan over medium-high heat.
- Add the ground chicken and cook 5 to 6 minutes, breaking it up with a spoon, until cooked through and starting to brown.
- Add the garlic and ginger and cook 1 minute until fragrant.
- Stir in the hoisin sauce, soy sauce and sesame oil and cook 1 minute until glossy.

3Plate
- Drain the lettuce cups and pat them dry.
- Pile the chicken into a serving bowl.
- Garnish with the green onions, carrot and crushed peanuts.
- Serve family style: spoon the chicken into the cups at the table and eat like tacos.
