Start the rice

1Start the rice

  • Rinse the rice until the water runs clear.
  • Cook the rice with 1¼ cups salted water: boil, cover, cook on low 15 minutes, rest 5 minutes.
  • Fold 1 tsp of the sesame oil through the warm rice.

  • Meanwhile, separate the lettuce into cups and chill them in the fridge.
  • Grate the carrot.
  • Slice the green onions, keeping the white and green parts separate.
  • Mince the garlic and ginger.
Turkey filling

3Turkey filling

  • Heat 4 tsp oil in a skillet over medium-high.
  • Add the turkey and brown well, breaking it up, 6 minutes.
  • Add the garlic, ginger and the white parts of the green onions and cook 1 minute until fragrant.
  • Stir in the hoisin, soy sauce and remaining sesame oil and simmer 2 minutes until glossy.
  • Fold in the carrot off the heat.
Plate

  • Pile the filling into the cold lettuce cups.
  • Top with the green tops of the green onions and the sriracha if desired.
  • Serve the sesame rice alongside.
