Turkey Lettuce Wraps with Sesame Rice

Ingredients
- ground turkey450 g
- jasmine rice1 scant cup
- iceberg lettuce1 ea
- carrot1 ea
- green onion3 stalks
- garlic2 cloves
- ginger1 thumb
- hoisin sauce3 tbsp
- soy sauce4 tsp
- sesame oil2 tsp
- sriracha (optional)2 tsp
Method

1Start the rice
- Rinse the rice until the water runs clear.
- Cook the rice with 1¼ cups salted water: boil, cover, cook on low 15 minutes, rest 5 minutes.
- Fold 1 tsp of the sesame oil through the warm rice.

2Prep
- Meanwhile, separate the lettuce into cups and chill them in the fridge.
- Grate the carrot.
- Slice the green onions, keeping the white and green parts separate.
- Mince the garlic and ginger.

3Turkey filling
- Heat 4 tsp oil in a skillet over medium-high.
- Add the turkey and brown well, breaking it up, 6 minutes.
- Add the garlic, ginger and the white parts of the green onions and cook 1 minute until fragrant.
- Stir in the hoisin, soy sauce and remaining sesame oil and simmer 2 minutes until glossy.
- Fold in the carrot off the heat.

4Plate
- Pile the filling into the cold lettuce cups.
- Top with the green tops of the green onions and the sriracha if desired.
- Serve the sesame rice alongside.
