  • Bring the vegetable stock to a boil.
  • Stir in the couscous, cover, and take it off the heat.
  • Let it steam 5 minutes, then fluff with a fork and cool slightly.
Chop the herbs and vegetables

  • Finely chop the parsley and mint.
  • Dice the roma tomatoes and half of the cucumber.
  • Thinly slice the green onions.
Dress the couscous

  • Toss the couscous with the herbs, vegetables, the juice of one lemon and 2 tbsp of the olive oil.
  • Season generously to taste.
Sear the paneer

  • Slice the paneer into 1/2 inch slabs and pat dry.
  • Dust with the paprika and a pinch of salt.
  • Heat the remaining olive oil in a nonstick pan over medium-high heat.
  • Sear the paneer 2 to 3 minutes per side until deep golden.
Plate

  • Pile the tabbouleh-style couscous onto two plates.
  • Lay the golden paneer on top.
  • Serve with the remaining lemon in wedges.
