  • Pat the steak dry with paper towel.
  • Rub the steak all over with the chili powder, cumin, garlic powder and a generous pinch of salt.
  • Thinly slice the bell peppers.
  • Thinly slice the red onion.
  • Cut one lime into wedges and set aside for serving.
Sear the steak

  • Heat 1 tbsp oil in a cast-iron skillet over high heat until it just starts to smoke.
  • Lay in the steak and sear 3 to 4 minutes per side until deeply browned and it reads 135F for medium.
  • Move the steak to a cutting board and let it rest for 5 minutes.
Char the vegetables

  • Add 1 tbsp oil to the same hot skillet.
  • Add the bell peppers and red onion and cook 5 to 6 minutes, stirring occasionally, until softened and charred at the edges.
  • Squeeze the juice of half of a lime over the vegetables and season to taste.
Warm the tortillas

4Warm the tortillas

  • Meanwhile, warm the tortillas in a dry pan over medium heat 30 seconds per side.
  • Wrap them in a clean towel to keep soft.
Plate

  • Thinly slice the rested steak against the grain.
  • Pile the steak and vegetables onto a warm platter.
  • Garnish with the cilantro.
  • Serve with the warm tortillas, sour cream and the lime wedges so everyone builds their own.
