Ingredients
- steak (sirloin or strip)350 g
- flour tortilla6 medium
- bell pepper2 ea
- red onion1 ea
- lime2 ea
- chili powder2 tsp
- cumin2 tsp
- garlic powder1 tsp
- sour cream1/2 cup
- cilantroa handful
Method

1Prep and season
- Pat the steak dry with paper towel.
- Rub the steak all over with the chili powder, cumin, garlic powder and a generous pinch of salt.
- Thinly slice the bell peppers.
- Thinly slice the red onion.
- Cut one lime into wedges and set aside for serving.

2Sear the steak
- Heat 1 tbsp oil in a cast-iron skillet over high heat until it just starts to smoke.
- Lay in the steak and sear 3 to 4 minutes per side until deeply browned and it reads 135F for medium.
- Move the steak to a cutting board and let it rest for 5 minutes.

3Char the vegetables
- Add 1 tbsp oil to the same hot skillet.
- Add the bell peppers and red onion and cook 5 to 6 minutes, stirring occasionally, until softened and charred at the edges.
- Squeeze the juice of half of a lime over the vegetables and season to taste.

4Warm the tortillas
- Meanwhile, warm the tortillas in a dry pan over medium heat 30 seconds per side.
- Wrap them in a clean towel to keep soft.

5Plate
- Thinly slice the rested steak against the grain.
- Pile the steak and vegetables onto a warm platter.
- Garnish with the cilantro.
- Serve with the warm tortillas, sour cream and the lime wedges so everyone builds their own.
