Cheesy Ground Beef Quesadillas

Ingredients
- flour tortilla4 large
- ground beef350 g
- cheddar cheese2 cups, grated
- yellow onionhalf an onion
- bell pepper1 ea
- chili powder2 tsp
- cumin1 tsp
- paprika1 tsp
- sour cream1/2 cup
- hot sauce1 tbsp
Method

1Prep
- Finely dice half of the onion.
- Thinly slice the bell pepper.
- Grate the cheddar if it isn't already grated.

2Brown the beef
- Heat 1 tbsp oil in a large nonstick pan over medium-high heat.
- Add the ground beef and cook 5 minutes, breaking it up with a spoon, until browned.
- Add the onion, chili powder, cumin and paprika and cook 2 minutes until the onion softens.
- Add the bell pepper and cook 3 minutes until softened.
- Season to taste with salt, scrape the filling into a bowl, and wipe the pan.

3Griddle the quesadillas
- Lay a tortilla in the dry pan over medium heat.
- Cover half with a quarter of the cheddar, half the beef, then another quarter of the cheese.
- Fold the bare half over and press with a spatula.
- Cook 2 to 3 minutes per side until deeply golden and the cheese is melted.
- Repeat with the remaining tortillas, beef and cheese.

4Plate
- Rest the quesadillas 1 minute, then cut each into wedges.
- Serve with the sour cream and hot sauce on the side.
