Crispy Mushroom Quesadillas
Deeply browned mushrooms and melted cheese in golden tortillas

Ingredients
- flour tortilla4 large
- cremini mushroom2 trays
- monterey jack cheese2 cups, grated
- yellow onionhalf an onion
- cumin1 tsp
- sour cream1/2 cup
- lime1 ea
- hot sauce1 tbsp
Method

1Brown the mushrooms
- Thinly slice the mushrooms and half of the onion.
- Heat 2 tbsp oil in a large pan over medium-high heat.
- Cook the mushrooms 6 to 8 minutes, stirring occasionally, until deeply browned and their liquid has cooked off.
- Add the onion and cumin and cook 2 minutes until softened.
- Season to taste and scrape into a bowl; wipe the pan.

2Griddle the quesadillas
- Lay a tortilla in the dry pan over medium heat.
- Cover half with a quarter of the cheese, half the mushrooms, then another quarter of the cheese.
- Fold the bare half over and press with a spatula.
- Cook 2 to 3 minutes per side until deeply golden and melted.
- Repeat with the remaining tortillas and filling.

3Plate
- Rest 1 minute, then cut into wedges.
- Serve with the sour cream, hot sauce and lime wedges.
