Crispy Chicken Quesadillas
Golden tortillas full of seasoned chicken, peppers and melted cheese

Ingredients
- flour tortilla4 large
- chicken breast350 g
- cheddar cheese2 cups, grated
- bell pepper1 ea
- red onionhalf an onion
- chili powder2 tsp
- cumin1 tsp
- sour cream1/2 cup
- lime1 ea
Method

1Prep
- Cut the chicken breast into 1/2 inch pieces.
- Toss the chicken with the chili powder, cumin and a pinch of salt.
- Thinly slice the bell pepper.
- Thinly slice half of the red onion.
- Grate the cheddar if it isn't already grated.

2Cook the filling
- Heat 1 tbsp oil in a large nonstick pan over medium-high heat.
- Add the chicken and cook 4 to 5 minutes, stirring once, until golden and cooked through.
- Add the bell pepper and red onion and cook 3 minutes until softened.
- Scrape the filling into a bowl and wipe the pan.

3Griddle the quesadillas
- Lay a tortilla in the dry pan over medium heat.
- Cover half with a quarter of the cheddar, half the filling, then another quarter of the cheese.
- Fold the bare half over and press with a spatula.
- Cook 2 to 3 minutes per side until deeply golden and the cheese is melted.
- Repeat with the second tortilla and the remaining filling and cheese, then the last two tortillas if you are extra hungry.

4Plate
- Rest the quesadillas 1 minute, then cut each into wedges.
- Serve with the sour cream and lime wedges for squeezing.
