  • Heat the oven to 425F.
  • Cut the potatoes into ¼ inch fries.
  • Toss the fries with 1 tbsp oil and season to taste with salt.
  • Spread the fries in a single even layer on a lined sheet pan.
  • Bake 30 to 35 minutes, flipping once, until deep golden and crisp.

  • Meanwhile, shred ¼ head of iceberg lettuce.
  • Slice the tomato into ¼ inch rounds.
  • Thinly slice half of a red onion.
  • Stir the mayonnaise, ketchup and the mustard if desired into a quick burger sauce.

  • Divide the ground beef into 2 loose balls, handling it as little as possible.
  • Season the outsides generously with salt and pepper.

  • Heat a cast-iron skillet with 1 tsp oil over high heat until nearly smoking.
  • Add the beef balls and smash each flat with a spatula.
  • Sear 2 to 3 minutes until a deep brown crust forms underneath.
  • Flip, lay a slice of cheddar on each, and cook 1 to 2 minutes more until melted and the patties read 160F.
Toast and build

5Toast and build

  • Toast the buns cut-side down in the skillet until golden.
  • Spread the burger sauce on both cut sides.
  • Stack the lettuce, a patty, the tomato and red onion on each bun.
  • Serve with the hot fries.
