Ingredients
- chicken breast350 g
- burger bun2 ea
- iceberg lettuce¼ head
- beefsteak tomato1 ea
- red onion1 ea
- russet potato2 ea
- mayonnaise3 tbsp
- paprika1 tsp
- garlic1 clove
- cheddar cheese (optional)2 slices
Method

1Fries first
- Heat the oven to 425F.
- Cut the potatoes into ¼ inch fries.
- Toss the fries with 1 tbsp oil and season to taste with salt.
- Spread the fries in a single even layer on a lined sheet pan.
- Bake 30 to 35 minutes, flipping once, until deep golden and crisp.

2Prep the toppings
- Meanwhile, shred ¼ head of iceberg lettuce.
- Slice the tomato into ¼ inch rounds.
- Thinly slice half of a red onion.
- Grate the garlic into the mayonnaise with a pinch of salt for a garlic mayo.

3Season the chicken
- Slice each chicken breast horizontally into a thin, even cutlet.
- Rub the cutlets with 1 tsp oil, the paprika, and season generously with salt and pepper.

4Sear the chicken
- Heat a skillet with 1 tsp oil over medium-high heat.
- Sear the chicken 4 to 5 minutes per side until golden and it reads 165F.
- Lay a slice of cheddar on each in the last minute if desired.
- Let the chicken rest for 3 minutes.

5Toast and build
- Toast the buns cut-side down in the skillet until golden.
- Spread the garlic mayo on both cut sides.
- Stack the lettuce, a chicken cutlet, the tomato and red onion on each bun.
- Serve with the hot fries.
