Crispy Salmon Burgers with Lemon Mayo

Ingredients
- salmon (skinless)350 g
- burger bun2 ea
- panko2/3 cup
- egg1 ea
- mayonnaise1/4 cup
- lemon1 ea
- dilla small handful
- romainea few leaves
- red oniona few rings
Method

1Make the patties
- Cut the salmon into chunks and pulse it in a food processor until coarsely chopped, not paste.
- Mix the salmon with the panko, egg, chopped dill, the zest of the lemon, 1/2 tsp salt and a grind of pepper.
- Shape into 2 thick patties and chill 10 minutes so they firm up.

2Lemon mayo
- Stir the mayonnaise with the juice of half of the lemon and a pinch of salt.

3Sear the patties
- Heat 2 tbsp oil in a nonstick pan over medium-high heat.
- Cook the patties 3 to 4 minutes per side until deep golden and cooked through.

4Toast and build
- Split and toast the buns in the pan 1 minute until golden.
- Spread both sides with the lemon mayo.
- Stack the romaine, a patty and a few thin rings of red onion on each bun.

5Plate
- Serve with the remaining lemon in wedges.
